It has been a while since I’ve ventured into a more-than-3-ingredient recipe, so I thought I would try something new: rice and veggie stir fry! I found this recipe over at Heavenly Homemakers’ blog, so after you’re done reading this, go on over there and discover some amazing recipes that I’m too afraid to try at the moment (their link is at the end of this post).
I have never in my life made any kind of stir fry, and the idea for some reason sounded a bit scary to me. The recipe sounded too good, though, and we happened to have all of the ingredients in the house, so I just went for it. Aside from slightly overcooking some of the rice (only some of it!), it turned out pretty darn good! This is what the recipe calls for:
1 cup brown rice
1 cup fresh or frozen broccoli
3 carrots
3 T. olive oil
1 cup sweet corn
½ t. garlic powder
½ t. sea salt
¼ cup soy sauce
We didn’t have 3 carrots, so I just chopped up 1 cup of baby carrots, which seemed to work just fine. The only other thing I decided to add to the stir fry was some chicken we had previously grilled, and I’m sure you can use other meats if you want to give it a little more substance. This recipe went really smoothly (except for the aforementioned rice incident), and I was actually surprised at how good is was! Of course, I couldn’t be sure until the ultimate judge had a taste. So I dished some up for Mom, and, for the most part, she thought it was very tasty! I think I did hear her mumble something about rice and a broken tooth, but maybe I was just hearing things.
In the end, I was very pleased with the overall outcome of the dish. We will definitely be having it again, and I would like to add in a few other veggies, like onions or bell peppers, to add a little bit more variety.
