Chronicles of the Inexperienced Cook: Peanut Butter Banana Ice Cream

Happy Monday, everybody! I know that Monday is not exactly most people’s favorite day of the week, so I thought I would share something that might give you something to look forward to at the end of a long work day tonight. I don’t know about you, but every now and again I start to have a craving for a nice and cold, sweet, creamy bowl of ice cream. There are two problems that often arise from this craving: first, I am slightly lactose intolerant, which means a bowl of ice cream is not really worth the pain I experience 10 minutes after eating it; and second, if you have ever tried the ice cream that is supposed to be the healthier choice by eliminating sugar or fat, you know as well as I do that whatever they put in that stuff is not actually ice cream. So what is one to do? Well

, I happened to stumble upon a simple recipe that looked really yummy that I had to try: peanut butter banana ice cream. And the best part about this recipe? It only uses two ingredients: bananas and peanut butter.


Here’s what you need to do: Cut up 3 or 4 ripe bananas and put them in the freezer for about 2 hours, or until they are frozen. Once they are frozen, puree them in a blender. If you have a high-powered blender you should be fine, but if you have a weak one like I do you might want to put a little bit of milk (I use almond milk) or use a food processor instead. Getting the bananas to a consistency similar to soft serve ice cream may take a few minutes and you may have to stop to stir a few times, but I promise it will be worth the wait! Once the bananas are pureed to the desired texture, put in about 2 tablespoons of peanut butter and puree until blended evenly. It may not look very pretty, but it tastes oh so amazing! You can serve it up immediately for soft serve, or you can put it in the freezer for a while to get hard ice cream (just don’t do what I did and forget about it until it’s turned into a large peanut butter-banana flavored chunk of ice)

This recipe is so easy (which I love!) and it tastes amazing. Plus it’s a great healthy alternative, meaning a guilt-free solution to satisfying those sweet-tooth cravings!
